Peanut Butter Bars

Ingredients

1.5 stick Unsalted butter (6 ounces)    
2 cups Peanut Butter, preferably super smooth (or soy butter)
1.5 tsp Kosher salt              
2.5 cups Powdered sugar             
1/2 cup Brown sugar         
1.5 tsp Vanilla extract 
2 cups Semisweet chocolate chips     

Directions

  1. Melt all of the ingredients together except for the chocolate chips. You can use a microwave, or if you don’t have one, use a small pot as a steam bath. Fill the pot halfway with water. Once it boils, pour the chocolate in a glass pyrex bowl and place on top of your pot so it sits on the lip, not touching the water. Mix the peanut butter mixture until smooth and thoroughly combined. Remove the mixture from the microwave/hot water bath and swap it for the bowl of chocolate chips.
  2. Spread the peanut butter mixture in a 9x13 pan and smooth it evenly, you will then pour chocolate on top when it has melted.
  3. Chill your bars in the refrigerator for an hour, OR you can wrap and let it chill on the counter for a couple hours.
  4. Run your knife under hot water to get nice clean-cut lines.
