This is a great one pot meal for a snowy day or any day! You can substitute ground beef and turn it into a chili as well. Pay attention to the layering part as that is most important. I used a 6-qt Instant Pot for this recipe. The total cooking time was 45 minutes + 8 minutes to release the steam. If you do not have an Instant Pot you can use a slow cooker crock pot and the time will increase about another 45 minutes.

Ingredients

  • 3 oz Olive oil or avocado oil
  • 1 cup Sweet Onion, large dice
  • 1 cup Sweet mini peppers, large dice
  • 3 cups Miniature potatoes, cut in ½ or ¼ if too big
  • 6 ea Garlic cloves, whole
  • 2 cups Basmati or white long grain rice, rinsed
  • 3# Chicken breast
  • ½ cup Cilantro, chopped
  • ½ cup Parsley, chopped
  • 2 cups Salsa fresca, or use jarred if you want to burn that out
  • ½ qt Chicken stock
  • 2 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Smoked Hungarian paprika
  • 2 tsp Chili powder
  • 3 tsp Black pepper, ground
  • 3 Tbsp Kosher salt
  • 1 Tbsp Scallions, sliced
  • ½ tsp Chili oil (if you have it)

Directions

  1. Add your olive oil, onions, peppers, potatoes, garlic cloves in the bottom of your instant pot (or slow cooker). Layer with the rinsed rice. Layer the chicken breast on top, add the chicken stock and salsa. Add all of your seasonings mixed together on top. 
  2. Turn the pressure cooker on to high pressure for 45 minutes.
  3. Dinner is done! Totally delicious and simple. Top with a tad bit of chili oil, scallions and eat with a fresh a baguette if you can!
